Apple Turkey Cranberry Salad


  • 3 cups of chopped/shredded leftover turkey
  • 1/4 cup Vidalia or other sweet onion, extremely finely minced
  • 1/4 cup celery, extremely finely minced
  • 1/2 cup chopped apple
  • 1/2 cup mayo* or avocado mayo
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans (optional)
  • 1/2 tsp sea salt and pepper


  • In a large bowl, add the chopped turkey leftovers, chopped apples, onions, celery,  salt and pepper, cranberries, chopped pecans (optional), and mayo and mix well.
  • Serve right away over greens, in lettuce boats, or however you’d like. You can save leftovers in an air tight container in the fridge
